J. Scott Catering goes all the way with cuisine and décor. Reenactors have plundered replica pirate ships, and classic diners have been built for ’50s parties. Custom menus feature such dishes as potato-crusted salmon with lobster sauce and Moroccan chicken sauteed with tomatoes, olives and saffron (though the privateers could ask for hardtack and grog if they’d really wanted them). One birthday party featured all of the guest of honor’s favorite foods: herb-crusted Colorado rack of lamb, diver sea scallops with cracked peppercorn herb sauce, and couscous with grilled vegetables.
